How many days? During the week or weekend (or both)?

I'd say if you're spending at least two full days there, you'll have no problem getting to all the major attractions, even if you take your time. In both my visits, I spent two days (more like one full day and one half), and managed to ride all the coasters at least once, and most of the flats that I wanted to hit. I didn't go on a weekend, though; I think it was a Monday-Tuesday both times.

No worries, then. You should be able to do everything there is to do, and then decide which stuff is worth doing again.

You can get to some rides an hour early because you are staying on property. Waits for Mantis, Maverick, Mean Streak, Millennium Force, Raptor, Top Thrill Dragster, Wicked Twister, Power Tower, Skyhawk, and Shoot the Rapids can get crazy at times. They would be the best to try early. Of course if you miss out on day one you can always try again on day two. Also, Disaster Transport and Space Spiral are leaving to make way for a new coaster. There may be long lines for them as people will be getting their last rides. I would expect the line for WindSeeker will be long because it's new. (The line for SkyScreamer at SFGAV was bad this last June.) The other coasters are quality rides, but the lines are normally short at just about any time. As with any park, a map is a must. This particular place is long and thin. Once you start to angle to one side the paths don't make it easy to change back to the other side. I must admit that I don't know anything about the water park or the small flat rides. They may be something to catch up on if you have found that you can ride all the more serious stuff two or three times in those first two days.
I used to live in Ohio, but I always drove back after just one day. This should be great for you to have this time. I don't know how you are getting there, but this place is not really near anything. Getting there and back can be interesting. HAVE FUN

Also, don't forget Cedar Downs. It's one of the more memorable non-coaster rides there for me because I think there's only 3 like it in the world.

Make sure you the wind is down when you get in line for Windseeker. They stop operation if the wind speed is too high. (ironic, I know). Have a good time, CP is a great place to visit.

Any really tall things can be stopped by wind even without a big storm. I'm sure that they have shut down Top Thrill Dragster or Power Tower for that same reason. That reminds me, I try to catch a skyway type ride whenever I see one. Most parks don't have them though. Busch Gardens Tampa, Hersheypark, and Knoebels have the best. This has one too.

You will probably want to eat outside the park, especially if you'll be there for three days. I don't think there's really anything within the park that is worthy of the prices they charge. Also, ice water is free at any food vendor that's in a permanent building.

As far as coasters go, definitely use your ERT from staying on site. Besides that most people recommend working your way from the back of the park to the front. Other than that, look to hit Raptor around 5pm. A ride op suggested that to me once so I tried it and it worked. Its usually the shortest lines of the day for the ride right around then.

I disagree. The convenience of eating in the park is worth the price, to me at least. This is the primary reason the prices are so much higher than you'll find for similar fare outside the park.

I don't remember anything in Sandusky that I would call a fancy place to eat. Fast food would be cheaper outside the park than in and you do have time to go there. It is on a "point" though; there may be a lot of driving around to get back where you started.

Its a good thing that I already rode the windseeker at Canadas wonderland last summer.
